Measuring Olive Oil ‘Healthfulness’

Just noticed the current Olive Oil Times giving recognition to Prokopi and Eleni, wonderful friends from Greece.  Checkout the article Researchers Say New Tool Measures Olive Oil 'Healthfulness'. The article points out an ongoing informational piece:

" ... consumers will need education to accept and value the taste of oils with very high levels of potential health effects because they are usually more pungent and bitter."

As more studies/articles now reference the link to health benefits and olive oil with bitterness/pungency, people begin to tell us how they appreciate and trust an oil that "brings a cough".

With our current harvest we're at our third year sharing our California Heirloom Mission EVOO for Eleni and Prokopios' ongoing research to identify differences between extra virgin olive oils and classify them according to their potential health effects.  Powerful information!

As much as we appreciate the quality, innovative research Prokopios and Eleni are conducting, we enjoy their company -

     especially at the grove,

     in the evening sipping wine

as we have lively talks about adventures, ideas and dreams.                                                                                    (See Blog from 11-16-11)

Nice work you two!
